delizie neo zelandesi - New Zealand goodies

Cara Tatina,
e' una vita che non ti scrivo tramite il nostro mitico blog, mi puoi perdonare? A volte la vita si intromette e il tempo sembra non essere mai sufficiente per fare tutto quello che vorrei...lo che a volte sembra una scusa banale, io dico sempre che uno se vuole il tempo lo trova, ma come lo professo male questo motto ultimamente! Non posso nemmeno usare il bel tempo come scusa perche' qui di bel tempo non se ne vede neanche l'ombra! Dunque chiedo scusa a te e ai nostri lettori per avervi abbandonato per tutto questo tempo...

it's been so long since my last post, can you ever forgive me? Sometimes life gets in the way...time never seems enough to do everything I want to do...even if I am the first one to say if you want you can always find the time...I am doing very well, am I?! I cannot even use the nice weather as an excuse because here in Manchester we are still dreaming of Spring and it feels like Summer will never arrive. So I really hope you and our readers will forgive me for abandoning you for all this time...


Tu invece...mi hai regalato due post stupendi! Urbino me la ricordo appena, devo esserci stata da piccola coi miei genitori, mi piacerebbe ritornarci, magari assieme, che dici? E non posso fare a meno di essere d'accordo su "Amanda's Wedding", anch'io ho provato la stessa sensazione quando ho iniziato a leggerlo, ma poi si e' ripreso alla grande!


You instead...your last two posts were amazing! I just about remember Urbino, I went with mum and dad when I was little, I'd like to go back though, maybe together? And I can't help but agree with what you write about "Amanda's Wedding", I felt the same when I started reading it then it turned itself round for the best!


Lo so che mi hai sgridato, bonariamente, per l'ultimo post, ma non posso non dedicare un post alle vere e proprie delizie che ho gustato in Nuova Zelanda...prima in assoluto la pavlova, deliziosa torta a base di meringa e frutta fresca, della quale la Nuova Zelanda si contende l’origine della ricetta con la vicina Australia, a quanto pare fu inventata da un cuoco neozelandese in onore della ballerina russa Pavlova dopo aver assistito a uno spettacolo del tour che fece in Oceania nel 1926...o il delizioso gelato al gusto "hokey pokey", semplice gelato alla vaniglia con pezzetti di toffee...per non parlare della torta di meringa al limone...che delizia! Durante la mia vacanza ho scoperto che i Neo Zelandesi hanno davvero una debolezza nei confronti di tutto cio' che e' dolce, come si dice in inglese hanno un vero e proprio "sweet tooth"! Un po' (tanto!) come me, dunque mi trovavo a nozze! Ho notato che anche certi piatti salati avevano sempre qualcosa di dolce che li accompagnava, ad esempio il panino con tacchino, formaggio brie e salsa di mirtilli...o le torte salate fatte con le patate...dolci! 


You did tell me off for writing about those amazing places...you might tell me off again because now I'm going to share with you some of New Zealand's best goodies! They really love all things sweet, I can definitely say our Kiwi friends have a sweet tooth, which actually suits me just fine! First of all, Pavlova: meringue, whipped cream and fresh fruit...yum! It's officially New Zealand's national dessert and it was created in 1926 by a Kiwi chef who named it after a Russian ballet dancer, Pavlova, even if Australia will deny this...
During my stay I also often enjoyed hokey pokey ice cream, that is vanilla ice cream with pieces of honeycomb toffee...and another favourite, lemon meringue pie....delicious! Savoury dishes often had sweet flavours added to them, such a chicken, brie and cranberry sauce sandwich or a sweet potatoes tart.

Per finire in bellezza, scrivo qui di seguito la ricetta della Pavlova che mi sono portata a casa come suovenir...su una tovaglietta :-)


To finish this post on a sweet note, here is the Pavlova recipe I brought back with me as a souvenir...on a tea towel :-)





Ingredienti:
4 albumi
un pizzico di sale
250gr zucchero
1 cucchiaino di vaniglina
2 cucchiaini di amido di mais
1 cucchiaino di aceto
per decorare:
panna montata
fragole, kiwi (o altra frutta a piacere)


Preriscaldate il forno a 150°. Iniziate a montare con la frusta a velocità elevata gli albumi d’uovo e il sale, aggiungendo gradualmente lo zucchero finché questo non sarà completamente sciolto. A questo punto unite l’amido di mais, la vaniglina e l'aceto. Versate la meringa così ottenuta su una placca da forno facendo attenzione che non tocchi i bordi. Mettete nel forno e riducete la temperatura a 140°, cuocete per 15 minuti. Riducete la temperatura a 120° e cuocete per un'altra ora e un quarto, quindi spegnete il forno e lasciatevi dentro la meringa per un’altra mezz’ora senza aprire lo sportello. Vi accorgerete che sarà cotta quando si presenterà dura fuori e umida dentro. Quando sarà fredda, copritela con panna e decorate con fragole e kiwi. 


Ingredients:
4 egg whites
1 pinch salt
250gr caster sugar
1 tsp vanilla essence
2 tsp cornflour
1 tsp vinegar


First, preheat the oven to 150°. Beat the egg whites and salt until stiff peaks form. Gradually add the caster sugar beating all the time until the sugar is completely dissolved. Next, lightly fold the cornflour, vinegar and essence into the mix. Turn the mixture out into the centre of a baking tray and shape into a circle, but don't let it touch the sides. Turn the oven down to 140° and bake for 15 minutes, then turn the oven down to 120° and bake for a further 1 and 1/4 hours. Let it coll in the oven, then top with fresh whipped cream, succulent strawberries and juicy kiwifruit. Delicious!

Let's get cooking! - Oggi si cucina!

Cara Tatina,
quanto ci siamo divertite al mercatino di Natale di Manchester! E' stato piacevolissimo rivisitare quella bellissima giornata trascorsa assieme, grazie mille!

we did have loads of fun at the Manchester Christmas Markets, thanks for taking me back to that beautiful day we spent together, shopping, eating, laughing!

Mi chiedevi la ricetta della torta che ho cucinato la settimana scorsa e di cui ti ho parlato nel mio post precedente, così ho deciso di accontentarti e di condividerla qui sul blog :-)

You asked me for the recipe for the pie I talked to you about in my last post, so here I am sharing it here on the blog today.


"moo-dy blues" steak & stilton pie


Ingredienti:

2 cucchiai di olio d’oliva
1 cipolla tritata
2 bastoni di sedano tritati
2 carote, sbucciate e tritate
1 spicchio d'aglio
600g carne di manzo da spezzatino tagliata a cubetti di 2.5cm
2 cucchiai di farina
2 foglie di alloro
1 cucchiaino di senape in polvere
Qualche rametto di timo
1 cucchiaio di concentrato di pomodoro
1 bicchiere di vino rosso
600ml di brodo di carne
375g pasta sfoglia
200g di formaggio Stilton sbriciolato
1 uovo, leggermente sbattuto, da spennellare sulla pasta sfoglia
sale e pepe nero  


Ingredients:

2tbsp olive oil
1 onion, chopped
2 celery sticks, chopped
2 carrots, peeled and chopped
1 garlic clove, finely chopped
600g beef skirt, brisket or decent stewing steak, cut into 2.5cm cubes
2tbsp plain flour
2 bay leaves
1tbsp English mustard powder
a few springs of thyme, leaves picked and chopped
1tbsp tomato purée
1 large glass of red wine
600ml beef stock
375g puff pastry
200g Stilton cheese, crumbled
1 egg, lightly beaten, to glaze
sea salt and black pepper


Metodo:
Scalda l'olio in un tegame capiente, aggiungi le verdure e l'aglio e cuoci a fuoco medio per circa 15 minuti, finchè raggiunge un bel colore dorato. Aggiungi la carne rinforzare e cuoci per circa 5 minuti. Aggiungi la farina, , l’alloro, la senape in polvere, il timo e il concentrato di pomodoro. Aggiungi il vino rosso e mescola bene. Versa il brodo di carne, porta il tutto a bollitura e cuoci, coperto e a fuoco molto basso per circa 2 ore, fino a che la carne diventa bella tenera. Condisci con sale e pepe a piacere, poi trasferisci il tutto in una pirofila da forno per raffreddarsi. 


Heat the oil in a large pan, add the vegetable and garlic and cook over a medium heat for about 15 minutes, until golden. Add the beef and cook for about 5 minutes, until sealed all over. Stir in the flour, then add the bay leaves, mustard powder, thyme and tomato purée. Add the red wine and stir well. Pour in the beef stock, bring to a simmer, the cover and cook over a very low heat for about 2 hours, until the beef is tender. Season to taste, then transfer the mixture to a pie dish and leave to cool.


Scalda il forno a 180°C/350°F/gas 4. Stendi la pasta sfoglia su una superficie leggermente infarinata fincheè non raggiunge uno spessore di circa 5mmi. Sbriciola il formaggio sopra la carne e spennella l'orlo della pirofila con l'uovo sbattuto, quindi ricopri la pirofila con la pasta sfoglia. Taglia la pasta in acesso e spingi lungo tutti i lati per sigillare la torta. Spennella il coperchio di pasta sfoglia col resto dell’uovo e fai delle fessure sulla torta con un coltello affilato. Cuoci per circa 30 minuti, fino a che la pasta sfoglia non ha raggiunto un bel colore dorato. Servi accompagnata da un purè di patate alla senape e del cavolo cotto a vapore, leggermente saltato in padella con dei dadini di pancetta affumicata.

Heat the oven to 180°C/350°F/gas mark 4. Roll out the pastry on a lightly floured surface to about 5mm thick. Crumble the Stilton over the beef filling. Brush the rim of the pie dish with a little of the beaten egg, then lift up the pastry on the rolling pin and use to cover the dish. Trim off the excess pastry and press down all the way round to seal. Brush the pastry with beaten egg, then make slits in the top so you can see the cheese. Bake for about 30 minutes, until the pastry is golden brown. Serve with English mustard mash and steamed cabbage, tossed briefly in a pan with fried bacon lardons.

Ma Herman vive nella casetta di pan di zenzero? // Does Herman live in a gingerbread house?

Buondì Tatina! Ma lo sai che se mi avvicino allo schermo  posso sentire il profumo di quelle due meravigliose torte? Hanno davvero un aspetto invitante, ma sono sicura che non te ne avanzerà un pezzetto per quando tornerai in Italia la prossima settimana, ne?
Sai che anche da noi esiste una cosa simile, anche se non ho mai "partecipato". Il dolce si chiama Torta di Padre Pio, e mi pare che giri attorono al periodo di Pasqua.
Il mio più grande problema è che odio le catene, o tutto quello che vi assomiglia, e mi rifiuto categoricamente di parteciparvi, anche se a volte (come nel caso di Herman) si tratta di belle inziative legate all'amicizia...
E mentre tu ti occupavi di far crescere il tuo Herman (mi piace l'idea di dare un nome di persona ad un dolce!), io ho ritentato l'esperimenti "casetta di pan di zenzero", con qualche modifica sull'impasto per renderla più gradevole al gusto italiano!
Sinceramente non pensavo di poterci riuscire. A riprodurla intendo. Quel giorno a casa di Rose mi era sembrato fin troppo facile:

 E infine componiamo le nostre casette usando la glassa come collante, decorandole poi a nostro piacimento!

Devo dirti la verità, è stata una giornata parecchio stancante, ma davvero divertente: tante chiacchiere, risate, tanti tè fra un assaggio e l'altro, qualche battuta ed il tempo è letteralmente volato!

E così ci ho riprovato a casa, nella mia cucina, con i miei attrezzi: ho rivisto le dimensioni della casetta, che è venuta un po' più piccina, ho comprato qualche caramella -fra la scarsa scelta che come ben sai abbiamo qui in Italia- e ho cambiato l'impasto, usando quello per la pasta frolla. A dirti la verità ho usato ugualmente il golden syroup che mi sono portata a casa da Manchester, e gli ha dato quel tocco in più di dolcezza e fragranza!
In sostanza per l'impasto ho usato:

200 gr di farina
50 gr di zucchero di canna
50 gr di golden syroup
1 uovo
1 bustina di vanillina
1 pizzico di sale
80 gr di burro

Con queste dosi mi sono venute quattro casette piccole, da regalare a quattro bimbi golosi! :-)
E' stato divertentissimo poterle decorare con zucchero a velo, cioccolato bianco, pezzi di pistacchio, liquerizie ripiene e confetti colorati: soprattutto perchè la metà sono finiti direttamente nella mia bocca affamata!
E' stato divertente, sì, ma mai quanto quel giorno, tutte insieme, quando ci siamo godute una giornata al femminile al cento per cento!

Good Morning Tatina! You know, as I go close the display I can feel the smell and the fragrance of your cakes! They look really inviting, but I'm sure I can't ask you to bring a piece to Italy to our next meeting: by that time it'll be finished for sure!
Did you know that we have a similar cake in Italy? It's called "Padre Pio's cake" and it's a kind of chain going around usually in Easter time. However, since I don't like anything called "chain" or related to that name, I always refused to keep on working on the dough (actually, I've never been asked to take a piece, so I didn't have to make the choice). But Herman looks like something kinder, linked to friendship and joy...
And while your were busy making Herman growing up (I like the idea of giving a sewwt a person's name!), I tried again to make the gingerbread house by myself, this time making some changes to the ingredients, getting them closer to Italians taste!
At first I though I couldn't manage all by myself. I mean, to make it all without any help. That day at Rose's it seemed to me so easy:
read the instructions on our little books and take notes, make the dough, cut it in shapes and bake it, assemble our little houses using icing as an eadible glue!
To say the thruth, it was a very tiring day, but a really fun one: chatting all the time, laughing, drinking tea while trying Rose's deliciuous cookies, and making jokes. Time flew!
So I decided to try it again at home, in my kitchen, with my tools: I made again the house template (I wanted  to make a smaller one), I bought some sweets (although you know that in Italy we have a very limitated choice on sweets) and, as I told you, I changed the dough (even if  I still used the golden syroup I bought in Manchester, which gave it a special flavour and sweetness).
So my dough was made of:


200 gr plain flour
50 gr di rough sugar
50 gr  golden syroup
1 egg
1vanilla bag
1 pinch of salt
80 gr butter

I made 4 little houses, that have been given to four greedy children! :-)
It was so fun to decorate them with icing sugar, melted white chocolate, pistachios, stuffed liquorice and coloured sweets: actually I did eat almost half of them while cooking, and that was the most fun part eheheheh!
It was fun, yes, but no as that day, all together in a special women day!

Buon rientro e... muffins pere e cioccolato per tutti!!

Tatina Cara! Mi mandi le foto della tua Ferrara, ma spero che tu te la sia goduta a sufficienza dal vivo in questi giorni!
Intanto io posso dire di essermi goduta quel giorno e mezzo in cui ci siamo viste: il giro al centro commerciale, il pranzo al giapponese, la spesa al super, preparare insieme i muffins per la colazione, e poi la super seratona con tutti gli amici! E pensare che ci sono persone che possono permettersi di farlo tutte le settimane -se non tutti i giorni- e per loro è normale e scontato. Queste persone non sapranno mai apprezzare al 100% ogni singolo momento come abbiamo fatto noi: i vantaggi e gli svantaggi di vivere 1200 miles apart...

Proprio ieri ripensavo al nostro Freaky Friday (esiste anche un film con questo titolo), e devo dire che è stato perfetto: non sai quanto mi sono divertita! E proprio mentre ricordavo le tre ore passate in pista a ballare come forsennati musica anni '80, sento alla radio una canzoncina familiare:


Eh, sì, proprio Neffa, con "Io e la mia signorina"! Ti ricordi come lo ballavamo? Punta del piede avanti, tocca il pavimento e poi punta indietro, e intanto si cantava a squarciagola...
Sto diventando un po' troppo malinconica mi sa, e già mi immagino una lacrimuccia che scende sulla tua guancia.
Per farmi perdonare ti voglio mandare la ricetta di quei muffins pere e cioccolato che abbiamo fatto venerdì. Mi è piaciuto come da upside-down pear cake li abbiamo trasformati in piccole monoporzioni, aggiungendo quel tocco di cioccolato fondente che -ti dirò- ci stava a pennello!
Vuoi il peso in gr o oz? mmm... te li darò entrambi!
Alla fine vengono 12 cupcakes più un bel cucchiaio di assaggio a crudo, per gli amanti come la sottoscritta. A te che non piace leccare il recipiente, toccherà ridistribuire l'impasto negli altri pirottini!

200 gr di farina 00 (7 oz)
200 gr di zucchero (7 oz)
200 gr di burro a temperatura ambiente (7 oz)
3 uova
1 bustina di lievito
3 cucchiai di latte
aroma di vaniglia
1 pera bella matura
4 quadratoni di cioccolato fondente
zucchero a velo per la decorazione finale

Lavorare il burro e lo zucchero (noi ne abbiamo usato meno: solo 6 oz) insieme fino ad ottenere un composto...mmm... come posso dire? "Fluffy" è la parola giusta! Bello spumoso e bianco!
Aggiungere le uova una per volta.
A parte mescolare la farina con il lievito e la vaniglia ed incorporarla nell'impasto un cucchiaio per volta. Infine aggiungere il latte, sempre continuando a mescolare.
Sbucciare la pera (e questo abbiamo visto che sai farlo bene) e sminuzzare il cioccolato, aggiungendoli alla fine al composto, mescolando con un cucchiaio di legno dal basso verso l'alto.

Infornare a 180°C per 25 minuti e spolverare con zucchero a velo a piacere una volta raffreddati!
E QUANTO ERANO BUONI??



Ed eccoci arrivati alla fine, sì perchè, una volta tornata alla routine quotidiana, mi toccano quei piccoli gesti a cui non posso assolutamente rinunciare... LE PULIZIE!!!
